Even though all lotus offered are edible, for the first time, we are offering lotus meant to eat! Big round baseball size tubers are a bit differently shaped than most common vegetable varieties but just as delicious.  Flowers are white, but don’t bloom often since energy is directed to producing tubers.  Leaves are large and beautiful.  We suggest growing this in a dug-in-ground plastic kiddie pool to allow tubers to spread.
