“Don’t Trash Your Weeds – Eat Them!”

“Weeding” is a procedure that every gardener proceeds to implement at various times during the growing season.  Sadly, however, many toss the uprooted weeds into the garbage – “sadly” because, in many instances, those weeds are not only more nutritious than the vegetables being grown but often just as tasty.  Ralph Waldo Emerson once observed: “What is a weed? A plant whose virtues have not yet been discovered.”  During this presentation, you will learn the nutritional value of weeds and how to prepare them and eat them.

Matthew Alfs, MH, RH (AHG) has been an herbal clinician and an educator for 23 years.  He has taught herbal medicine and wild-foods nutrition at both universities and colleges in the Twin Cities area and has lectured to many organizations, associations, and groups on the subject – both locally and nationally.  He has had numerous articles on edible and medicinal wild plants published in journals and magazines and he is the author of the widely acclaimed books Edible & Medicinal Wild Plants of the Midwest (3d ed., 2020), 300 Herbs:  Their Indications and Contraindications (2d ed., 2020), and Diary of a Country Herbalist (2017).  Matthew has also been featured on radio, on television (on KARE-11 and on The Environmental Journal program), and in the St. Paul Pioneer Press relative to his expertise in edible and medicinal plants.
